CHA-CHAPickle Relish
1 Large Cabbage6 Large Onions 12 Large Green Tomatoes ½ Cup Celery 6 Jalapeno Peppers 2 Tablespoons Kosher Salt ½ Cup Water 1-Cup Cider Vinegar 1-Cup Light Brown Sugar 1 Tablespoon Pickling Spice 1 yard of cheesecloth or other thin fabric
Cut the following items into small pieces, cabbage, onions, tomatoes, celery, and jalapeno. Place vegetables into a blender and chop it up. Sprinkle with the salt and wrap in the cheesecloth and let drain over night into a large bowl or pot. In the morning rinse the cheesecloth thoroughly. Place the vegetables and remaining ingredients into a large pot and bring to a boil, water, vinegar, brown sugar, and the pickling spice (tied in cloth). Cook until the vegetables are tender. You can add more sugar or pepper according to your taste. |
